이 회차의 핵심은 ‘메뉴를 바꿨다’가 아닙니다. 이전 메뉴의 가장 큰 문제는 맛이 아니라 기억에 남지 않는 구조였습니다. - 평범한 음료 구성 - 키오스크에서 뭘 먼저 팔고 싶은지 안 보이는 배열 - 굳이 여기서 먹어야 할 이유 없는 메뉴들 이 상태에서는 아무리 손님이 와도 선택이 분산되고, 시그니처는 생기지 않습니다. 그래서 이번 메뉴 개편은 레시피부터가 아니라 구조부터 다시 짰습니다. 비슷한 컨셉의 잘 되는 대형카페들을 직접 가보고, 어떤 음료를 전면에 두는지, 왜 그 음료를 먼저 보이게 하는지 하나씩 분석했습니다. 그 다음에 수제 재료를 활용해 기본 음료의 만족도를 올리고, 이 매장에서만 먹을 수 있는 시그니처 메뉴를 중심으로 메뉴판을 다시 구성했습니다. 메뉴는 많다고 팔리는 게 아니라, ‘기억되는 메뉴’가 있어야 팔립니다. 저장해두면 메뉴 개편할 때 바로 써먹을 수 있습니다. #카페창업 #원두납품 #카페운영 #양평카페 #수미마을
